Types of grapes: Pinot Nero 75% - Chardonnay 25%

Wine-making process: Soft pressing of grapes, fermentation in steel vats and small oak casks at controlled temperature, after which wine is kept in contact with the yeasts by batonnage (stirring). Successively the Franciacorta wine is prepared for drafting and re-fermentation in the bottle where it is aged on the yeasts for at least 30 months.

Permanence in bottles in contact with yeasts: 30 months

Sugar: g/l 6.5

Colour: pale pink

Aroma: fine, gentle, fruit and yeasts.

Flavour: sapid, fresh, fine and harmonious, evident character and body.

Gastronomy: an excellent aperitif, a pleasant accompaniment to cured meats and medium ripe cheeses, tasty first courses and main fish courses. Enjoyable with fruit desserts.
